RECIPE: Watermelon Cooler
We’re in the dog days of summer, full of wedding celebrations, block parties, company picnics, and full days at the beach. A full social calendar, while fun, can leave you longing for a long summer afternoon of patio time with friends…and a whole lot of nothing to do!
It’s moments like these when it’s nice to relax and refresh both your palate and spirits with a cool drink and great conversation. And what’s more refreshing than the official fruit of summer–WATERMELON?
We really enjoy this colorful summer cocktail, loaded with cooling flavors, juicy fruits, and enough fizz to keep the mood light.
- One-half small seedless watermelon, scooped out into small chunks
- 4 oz fresh lemon juice
- 4 oz simple syrup
- Two big handful of fresh mint leaves
- 6 oz Hendrick’s gin
- Splash of soda
Start by slicing your watermelon into small chunks. Purée your fruit in a blender, then run the purée through a sieve to create about 4 cups of juice.
Prepare 4 highball glasses with crushed ice and some mint garnish.
In a shaker, add 1 oz lemon juice, 1 oz simple syrup, and the remaining mint. Muddle away. Add 1.5 oz each of Hendrick’s Gin and your puree. Don’t be afraid to add a little pulp. Shake, strain into your glasses and top with a splash of soda.
Talk, laugh, put your feet up and enjoy your summer days while they last!
